| The Dessert Semillon 2010 - SOLD OUT
The vines are hand pruned & dry grown. The cordons were severed
3 weeks prior to hand picking and the fruit was chilled
prior to the whole bunches being pressed.
Tasting Notes -
Quite light in colour, it gives no hint of the fuji apple nose or the boundless apple and citrus palate that finishes with just a hint of pear custard. The sugar is nicely balanced with the crisp acidity.
Drink over the next 3 to 5 years.

was made by Colin Sheppard with the fruit coming from Moculta. Open top ferment, minimal pumping, 20 months in French Oak.
Tasting Notes - The 2009 Shhh Cabernet is 100% Eden Valley fruit, so doesn't have the leafy character that a Coonawarra Cabernet usually exhibits. The pallet shows black currant, plums and some red fruit characters. The tannins are fine and well integrated. It has a soft mouth feel with good acidity. Drink Now to 2018
